The whisky that ypu hold in your hand has been specially fininshed for over three months in a fresh, first fill Sherry Cask called an Octave. An Octave is a cask that has been custom built to just one eighth the size of a standard (500 litre) sherry butt.

By Virtue of their smaller size, Octaves create an increased interaction between whisky and wood. The result is the attainment of maximum richness and depth of flavour during the final period of maturation.

Nose: Grapes, honey and molasses. Dark rye bread and stewed plums. Incredibly inviting.

Taste: Maltiness blooms into sweet fruitiness, floral notes (orange blossom, honeysuckle), raisins, hints of chocolate turning gently woody and herbaceous.

Finish: Fudge, chocolate, orchard fruits, gentle oak and warming.
